Mixed Vegetable Rice with Capsicum Salad


Mixed Vegetable Rice:

Ingredients:
  • Basmati Rice – 200g
  • Mixed vegetables (carrot, beans, green peas, potato) - cut into 1- 1½ inch pieces or as you desire – totally 250g  
  • Onion – ½ cup  
  • Tomato – 1 
  • Green chillies – 2 
  • Green onion - ¼ cup
  • Ginger and Garlic paste – 1Table spoon 
  • Turmeric powder – ¼ Tea spoon 
  • Curry leaves – few 
  • Coriander leaves  
  • Oil – 2 Table spoon 
  • Butter – 3 Table spoon 
  • Mustard seeds 
  • Whole garam masala (clove, cinnamon, cardamom)
 Method :
  • Soak rice for about 20 mins. 
  • Heat oil and butter in a pressure pan. Add mustard seeds. When they pop up, add onion, whole garam masala, and a pinch of salt. Sauté till onion becomes slightly brown.  
  • Add tomato, green chillies, curry leaves and ginger garlic paste. Sauté for few seconds.  
  • Add vegetables, green onion and turmeric powder and Sauté for few seconds. 
  • Pour 400 ml water and adjust salt. 
  • When the mixture starts boiling, add soaked rice. 
  • Close the lid and allow 3 whistles. 
  • Turn off the stove and open after 20mins. 
  • While serving, garnish with coriander leaves.
 Capsicum salad:
  • Cut capsicum into 1 inch pieces. Remove seeds. 
  • In a hot pan, take 2 Table spoon olive oil.  
  • Add capsicum and sauté them in a medium flame for about 5 mins. 
  • Serve with Mixed Vegetable Rice.
 Note:
  • Good recipe for picky eaters.  
  • Kids will love this colorful vegetable rice and salad when you pack for their lunch.

From my experience, I would advise to store green chillies in refrigerator after removing their stalk in an untied polythene bag to extend their shelf life.

Tomato

While cooking tomatoes for gravy or chutney, saute (fry in a little amount of oil) them before grinding. This will give you a different taste and a rich colour to your gravy or chutney.

Cantaloupe Pomegranate Relish


Ingredients:

  • Cantaloupe - 1
  • Pomegranate - 1
  • Cumin Seed Powder
  • Black Pepper Powder
Method:

  • Peel and cut cantaloupe into 3-4 inch pieces.
  • Collect Pearls from Pomegranate.
  • Arrange the fruits nicely in a plate.
  • Before serving sprinkle a pinch of cumin seed powder and black pepper powder over the fruits.
Note:
  • These two fruits are fully loaded with vitamins, minerals and anti oxidants.
  • This is an excellent food for a healthy life.
  • Kids will love this colourful combination.
